Ingredients
- 24 mini peppers, halved and seeded
- 1 (8-ounce) cream cheese, softened
- ½ cup Crystal sour cream
- 1½ cups chopped rotisserie chicken
- 1 (10-ounce) package frozen spinach, thawed and drained
- 2 cups shredded white cheddar cheese
- 2 green onions, thinly sliced
- ½ teaspoon garlic powder
- ½ teaspoon paprika
- ½ teaspoon red pepper flakes, plus more for garnish
- 1 teaspoon salt
- 1 teaspoon pepper
- Fresh parsley, finely chopped

Step 1
Heat oven to 400° F.

In a medium mixing bowl, combine cream cheese and sour cream. Mix well to combine. Add chopped chicken, spinach, white cheddar cheese, green onions and seasonings. Stir well to combine.

Place mini peppers, cut side up, on a lightly greased baking sheet. Divide the cheesy chicken mixture, evenly, between the mini pepper halves. Top with sprinkling of cheese. Bake for 10-12 minutes. Garnish with fresh parsley and red pepper flakes.
