Creamy Chipotle Spaghetti with Chicken

The creamy chipotle sauce is the highlight of this family meal. With the right amount of smoky spice and tender chunks of chicken breast this pasta dish is a complete meal any night of the week.

Ingredients

  • 3 large Roma tomatoes
  • 1 (16 ounce) package spaghetti pasta
  • ¼ onion plus ¼ cup chopped onion, divided
  • 1 garlic clove
  • ½ cup tomato sauce
  • ½ cup Crystal sour cream
  • 2 canned chipotle chiles in adobo
  • 1 teaspoon garlic salt
  • 2 tablespoons butter
  • 1 pound boneless chicken breast, cubed
  • 1 teaspoon salt, divided
  • ¼ teaspoon black pepper
  • ¾ cup Crystal whole milk
  • Cilantro sprigs for garnish

Directions

  • Step 1

    Add 2 quarts water to a large saucepan over medium heat. Bring to a boil. Add tomatoes and simmer for 20 minutes. Remove from heat, drain and let cool. Peel off tomato skins.

  • Step 2

    While tomatoes cook, cook spaghetti according to package instructions. Drain and set aside.

  • Step 3

    Combine cooked tomatoes, ¼ piece onion, garlic clove, tomato sauce, sour cream, chipotles and garlic salt in a blender. Blend until smooth. 

  • Step 4

    Add butter to a large skillet over low-medium heat. When butter has melted, add finely chopped onion and chicken. Season with ½ teaspoon salt and pepper. Increase heat to medium. Stir until chicken has cooked through; 7 minutes. Add blended mixture, stir in milk, season with remaining salt and decrease heat to medium-low. When milk has mixed in completely and mixture begins to simmer, add pasta and carefully stir to coat; 3 minutes.

  • Step 5

    Garnish with cilantro sprigs. Serve.
