Creamy Gnocchi Cajun Chicken Soup

Ingredients
- 1.5 pounds boneless skinless chicken thighs, cut into bite-sized pieces
- 1 16-ounce package of gnocchi
- 1 tablespoon Cajun seasoning
- 1 medium yellow onion, diced
- 2 stalks celery, diced
- 1 green bell pepper, diced
- 3 garlic cloves, minced
- 4-6 cups chicken broth
- 1 cup Crystal heavy cream
- 2 tablespoons olive oil
- Kosher salt and pepper to taste
- Fresh chopped parsley, for garnish

Step 1
In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the chicken thighs and cook until browned on all sides about 7 to 10 minutes. Remove the chicken from the pot and set aside on a plate.

In the same pot as you cooked the chicken, add the onion, celery, and bell pepper. Saute the vegetables for about 5 minutes or until softened.

Next, add in the garlic and Cajun seasoning. Stir to combine with the vegetables for about a minute or two.

Pour in the chicken broth and bring to a boil. Reduce the heat to low and simmer the broth for about 10 to 15 minutes to allow the flavors to meld.

Meanwhile, in a separate pot, cook the gnocchi according to package directions. Drain and set aside.

Return the cooked chicken to the pot with the simmering broth. Stir in the heavy cream and season with kosher salt and pepper to taste. Simmer for an additional 5 minutes to heat the chicken through and allow the flavors to combine.

Add the cooked gnocchi to the pot with the chicken and stir to combine. Divide the soup among four bows and garnish with fresh parsley.
