Individual Microwave Cupcakes

These individual cup-cakes are quick and fun. A great (and tasty) project to do with the little ones.

Ingredients

  • 2 tablespoons Crystal unsalted butter
  • 1 large egg
  • 2 tablespoons Crystal milk
  • 1 teaspoon pure vanilla extract
  • ¼ cup bakers sugar
  • ¼ cup plus 2 tablespoons self-rising flour
  • 1 tablespoon rainbow sprinkles
  • Topping Ideas: vanilla frosting, chocolate frosting, whipped cream, rainbow sprinkles

Directions

  • Step 1

    Place the butter in a glass 2 cup measuring cup, and microwave it for 20 to 30 seconds until just melted. Let cool slightly. 
  • Step 2

    Add the egg and whisk in with a fork. Whisk in milk, vanilla, and sugar. Add the flour, salt, and sprinkles. Whisk the batter until smooth. 

  • Step 3

    Divide the batter between two microwave safe cups. Microwave separately for about 1½ minutes each, or until risen and firm.

  • Step 4

    Top with desired frosting and sprinkles.
