One-Pot Creamy Mediterranean Chicken
1/4 cup Crystal Creamery Salted Butter
2 chicken breasts
2 Tbsp garlic puree
Salt and pepper
12 oz roasted red peppers, diced
8 oz cavatappi pasta
2 cups Crystal Creamery Vitamin D Milk
1 1/2 cup chicken broth
1/2 cup grated parmesan
2 cups fresh baby spinach (or 1 cup frozen spinach)
- In a large pot, melt butter over medium-high heat. Smear chicken breasts with garlic puree, salt and pepper generously. Add to pot and brown on both sides in butter.
- Add red peppers, pasta, milk, chicken broth and parmesan to the pot. Cover and cook for 12-14 minutes, or until pasta is al dente. Stir in spinach, cook until warm.
