Lazy Day Lasagna Soup

  • 2 tablespoons olive oil
  • 3 cloves of garlic
  • ½ cup finely diced onion
  • 1 pound of ground Italian sausage
  • 1 teaspoon chili powder
  • 1 tablespoon Italian seasoning
  • 6 ounces of lasagna noodles, cracked into 2” pieces
  • 28 ounces of fire-roasted diced tomatoes
  • 32 ounces of beef or veggie broth
  • ⅔ cup Crystal cottage cheese
  • ¼ cup grated parmesan
  • ½ teaspoon garlic puree (or ¼ teaspoon garlic powder)
  • 1 tablespoon finely chopped parsley

  • Step 1

    In a large pot or Dutch Oven, heat olive oil over medium heat. Add garlic and onion, cook until translucent, about 2-3 minutes. Add sausage, cook and crumble until browned. Add chili powder, Italian seasoning, lasagna noodle, tomatoes and broth to the pot. Cover and cook 10-12 minutes, or until noodles are al dente.

  • Step 2

    In a large bowl, stir together cottage cheese, parmesan and garlic.

  • Step 3

    Serve soup with a dollop of cottage cheese mixture on top. Garnish with parsley.
