Ingredients
- 2 tablespoons olive oil
- 3 cloves of garlic
- ½ cup finely diced onion
- 1 pound of ground Italian sausage
- 1 teaspoon chili powder
- 1 tablespoon Italian seasoning
- 6 ounces of lasagna noodles, cracked into 2” pieces
- 28 ounces of fire-roasted diced tomatoes
- 32 ounces of beef or veggie broth
- ⅔ cup Crystal cottage cheese
- ¼ cup grated parmesan
- ½ teaspoon garlic puree (or ¼ teaspoon garlic powder)
- 1 tablespoon finely chopped parsley

Step 1
In a large pot or Dutch Oven, heat olive oil over medium heat. Add garlic and onion, cook until translucent, about 2-3 minutes. Add sausage, cook and crumble until browned. Add chili powder, Italian seasoning, lasagna noodle, tomatoes and broth to the pot. Cover and cook 10-12 minutes, or until noodles are al dente.

Step 2
In a large bowl, stir together cottage cheese, parmesan and garlic.

Serve soup with a dollop of cottage cheese mixture on top. Garnish with parsley.
