Greek Cottage Cheese Salad

  • 2 cups Crystal cottage cheese
  • 3 cloves garlic, very finely minced
  • Juice of 1 lemon
  • Salt and pepper, to taste
  • 2 English cucumber, halved and sliced
  • 2 pints cherry or grape tomatoes, halved
  • 2 bunch green onions, sliced thin
  • 1½ cups kalamata olives (optional)
  • ½ cup olive oil

  • Step 1

    In the bottom of a large bowl, combine cottage cheese, garlic, and lemon juice. Salt and pepper to taste. Mix well. Scoop onto the bottom of a large serving platter.

  • Step 2

    Add cucumber, cherry, green onions and olives. Layer each atop cottage cheese. Drizzle with olive oil. Salt and pepper to taste. Serve and enjoy!
