Mama’s Sweet Potato Pie

Ingredients
- 1 sweet potato (1lb)
- ½ cup Crystal unsalted butter, softened
- 1 cup granulated sugar
- ½ cup Crystal heavy whipping cream
- 2 eggs
- ½ teaspoon ground nutmeg
- ½ teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- ½ teaspoon salt
- 1 unbaked pie crust (9-inch)

Directions

Step 1
Boil sweet potato whole in its skin for 40-50 minutes or until a fork easily pierces the skin. Run cold water over the sweet potato and remove the skin.

Preheat oven to 350 °F.

Add sweet potato and softened butter to a bowl. Mix well with a stand or hand mixer.

Add in sugar, heavy cream, eggs, nutmeg, cinnamon, vanilla, and salt. Mix on medium speed until mixture is smooth.

Pour filling into an unbaked pie crust.

Bake at 350 °F for 55-60 minutes or until a toothpick inserted in the center comes out clean. The pie will puff up during baking and then sink down as it cools.
