Sweet Potato Taco Boats with Ground Beef

A twist on the classic, these taco boats meet soft, warm sweet potatoes that add a delightful sweetness to this dish. Jam packed with spice and flavor, they’re perfect to enjoy for lunch, an easy dinner, or make a lot for a party full of hungry bellies.

Ingredients

  • 4 medium sweet potatoes
  • 1 tablespoon olive oil
  • 1 pound lean ground beef
  • 1½ teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon chili powder
  • 1 teaspoon dried onion powder
  • 1 teaspoon cumin
  • ½ teaspoon dried red pepper flakes
  • ½ cup cherry tomatoes, diced
  • 1 avocado, diced
  • ½ cup pepper jack cheese
  • ½ cup Crystal sour cream
  • Fresh cilantro, chopped

Directions

  • Step 1

    Heat oven to 400 °F
  • Step 2

    Rinse sweet potatoes and pat to dry.  Wrap sweet potatoes in aluminum foil and place on a baking sheet. Cook for 45 minutes, or until very tender. (Or microwave for 9-15 minutes, until tender).

  • Step 3

    In a skillet, over medium high heat, add oil and ground beef and crumble beef with a wooden spoon. Add all spices to the pan and stir. Continue cooking for 10-12 minutes, or until beef is browned. Cover to keep warm.

  • Step 4

    Once sweet potatoes are done, remove from the oven and carefully unwrap. Cut a slit in the middle of the sweet potato, gently squeezing to open.  Fill with ground beef mixture.

  • Step 5

    Before serving, top potatoes with tomatoes, avocados, a sprinkle of cheese and a large dollop of sour cream. Garnish with fresh cilantro, if desired.
