Southwest Salad
- 1 head romaine lettuce, chopped
- 1 medium ripe avocado, sliced
- 1 cup cherry tomatoes, halved
- 1 can black beans, rinsed and drained
- 1 cup corn, rinsed and drained
- ¼ cup tortilla strips
- Cliantro, for garnish
Avocado Dressing
- 1 large, ripe avocado
- ¼ cup Crystal sour cream
- 1 garlic clove
- 2 tablespoon fresh lime juice
- ¼ cup fresh cilantro, chopped
- 2 tablespoons extra-virgin olive oil
- ½ teaspoon salt
- Black pepper, to taste
- ¼ cup water

Step 1
Prepare the avocado dressing:
Place all of the dressing ingredients into a food processor or blender. Pulse until all ingredients are well mixed and the dressing has a smooth, creamy texture. Pour over salad, as desired.
Note: You probably won’t use all of the dressing, so make sure to store it in an airtight container in the fridge. -
Step 2
Assemble the salad:
Top the chopped romaine lettuce with the avocado, cherry tomatoes, black beans, corn, and tortilla strips. Drizzle the creamy avocado dressing on top of the salad and toss all ingredients together or serve the dressing on the side.
