Base
- ½ cup confectioners' sugar
- 1½ cup flour
- ½ teaspoon salt
- ¾ cup Crystal butter cut into small pieces
Filling
- 4 eggs
- 1½ cups granulated sugar
- Zest of 1 lemon
- ½ cup fresh lemon juice
- ¾ cup Crystal whipping cream

Step 1
Preheat oven to 325 °F. Grease a 13×9 inch pan. -
Step 2
Sift confectioners sugar, flour, and salt into a bowl. With a pastry blender, cut in the butter until the mixture resembles coarse crumbs. -
Step 3
Press the mixture into the bottom of the prepared pan. Bake until golden brown, about 20 minutes. -
Step 4
Meanwhile, whisk the eggs and sugar together until blended. Add the lemon rind and juice and mix well. -
Step 5
Lightly whip the cream and fold it into the egg mixture gently. Pour over the still warm crust, return to the oven, and bake until set, about 40 minutes. -
Step 6
Cool completely before cutting into bars. Dust with confectioners sugar.
