Eggnog Loaf
Made with Crystal eggnog, nutmeg, and a splash of rum, this decadent eggnog loaf is finished with a sweet eggnog glaze that brings holiday warmth to every bite. Perfect for sharing or enjoying with a quiet cup of coffee.
Ingredients
Cake
- 2 eggs
- 1 cup granulated sugar
- 1½ cups Crystal eggnog
- 1 teaspoon vanilla extract
- 2 teaspoons rum (optional)
- ½ cup Crystal unsalted butter, softened
- 2¼ cups flour, all-purpose
- 1 package French Vanilla Jello Instant Pudding Mix (3.4 oz)
- 2 teaspoons baking powder
- ½ teaspoon salt
- ½ teaspoon nutmeg
Glaze
- 1 cup powdered sugar
- 2 teaspoons Crystal eggnog
- 1 teaspoon Crystal milk
- 1 teaspoon rum (replace with milk, if desired)

Directions

Step 1
Preheat oven to 350 °F. -
Step 2
Prepare either 1 standard loaf pan or 4 small loaf pans by lining with parchment paper and/or cooking spray.

In a large mixing bowl, mix to combine eggs, sugar, butter, 1½ cups eggnog, vanilla, and rum.

In a separate bowl, whisk together the flour, pudding mix, baking powder, salt, and nutmeg.

Add the dry ingredients to the eggnog mixture in 3 batches, mixing well in between. The batter will be thick.

Pour into prepared loaf pan(s).

If using 1 standard loaf pan, bake for 55-65 minutes. If using 4 small loaf pans, bake for 30-35 minutes. Cake is done when a toothpick inserted in the center comes out clean.

While the cake cools, prepare the glaze.

Step 9
Combine all glaze ingredients in a bowl until smooth.

Once cake(s) are completely cooled, drizzle the glaze over the cake(s).
