This chicken salad is ideal for lunch. Pack it with crackers, put it on bread, send it with your kids to school, or bring it to work! The sweetness of the grapes and the crunchy celery makes it a super satisfying midday meal.
2 chicken breasts (½ pound of chicken), cooked and chopped
16 ounces Crystal cottage cheese
3 tablespoons mayonnaise
½ tablespoon dijon mustard
1 cup red grapes, halved
½ cup celery, thinly sliced
3 tablespoons slivered almonds, lightly toasted
½ teaspoon paprika
Salt and pepper to taste
In a medium bowl, combine chopped chicken, cottage cheese, mayo and mustard. Stir well to coat the chicken.
Add sliced grapes, celery and toasted almonds to the bowl. Stir to combine.
