
Brookie Ice Cream Sandwiches
The best flavors of gooey chocolate chip cookies and fudgy brownies come together in these brookie ice cream sandwiches! Layered with classic vanilla ice cream, this is a crowd-pleasing summer treat for kids and adults alike.
Ingredients
- 2½ cups all-purpose flour, divided (300 grams)
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- 1 teaspoon kosher salt
- 1 cup Crystal unsalted butter, softened (228 grams)
- 1 cup brown sugar, packed (205 grams)
- ¾ cup granulated sugar (150 grams)
- 2 large eggs, room temperature
- 2 teaspoons vanilla extract
- 1 cup chocolate chips (200 grams)
- ½ cup cocoa powder (40 grams)
- 1.5 quarts Crystal Vanilla Ice Cream

Step 1
Brookies
Preheat the oven to 350°F and line a sheet pan with parchment paper. In a medium mixing bowl, whisk together 2 cups (240 grams) all-purpose flour, baking soda, baking powder, & Kosher salt. Set aside.
Add the softened butter, brown sugar, and granulated sugar to a large mixing bowl. Using a hand mixer or stand mixer, beat the butter and sugars until light and fluffy, 3-4 minutes. Add the eggs one at a time followed by the vanilla extract.
Slowly beat the flour mixture into the wet ingredients just until you have a loose dough. Evenly divide the dough into 2 equal portions. In one half of the dough, add the remaining 1/2 cup (60 grams) all-purpose flour and chocolate chips to make the chocolate chip cookie dough. Mix just until the dough is well-combined and there are no more streaks of flour. In the other half of the dough, add 1/2 cup cocoa powder and mix until you have a thick brownie dough.
Using a #60 (1 Tablespoon) cookie scoop, spoon 1 Tablespoon of each dough. Gently press the cookie dough balls together and roll into a smooth ball. Repeat with the remaining dough.
Place the cookie dough balls 3 inches apart on the prepared sheet pan. Bake for 10-11 minutes, until the edges of the cookies are set and the centers are a tad under-baked. Let the cookies cool on the pan for 5 minutes, and then transfer them to a wire rack to cool completely. Freeze for 30-60 minutes. -

Assemble
When you’re ready to serve the ice cream sandwiches, flip one of the chilled cookies bottom side-up. Place a generous scoop of vanilla ice cream on the cookie. Sandwich another cookie on top and gently press the sandwich until the ice cream spreads to the edges. Repeat with the remaining cookies and ice cream.Serve immediately. Or, wrap each ice cream sandwich in parchment paper and store in an airtight container. Freeze for up to 1 month.
