
Red, White & Blue No Bake Icebox Cake
The perfect crowd-pleasing cake for summer, since you can leave the oven turned off! This no-bake berry icebox cake tastes like an eclair, but takes just minutes to make. Decorate with fresh berries for a patriotic red-white-and-blue treat that makes any party table prettier.
Ingredients
- 2-3 packages/sleeves (16-24 sheets) graham crackers
- 8 ounces Crystal heavy whipping cream
- 1 cup Crystal sour cream
- 2 cups Crystal milk
- 2 packages (3.4 ounces) vanilla or white chocolate pudding mix
- 1 tablespoon vanilla
- 2 cups sliced strawberries
- 2 cups raspberries
- 2 cups blueberries

Step 1
Line a 9×13″ pan with enough graham crackers to fully cover the bottom and set aside.

Pour the heavy cream into a large bowl and mix with an electric mixer until stiff peaks form, about 4 to 5 minutes. Add sour cream, milk, pudding mix and vanilla. Mix just until smooth.

Spread ⅓ of the mixture onto the graham crackers. Then layer ⅓ of the sliced strawberries, raspberries and blueberries. Repeat for 3 layers total (i.e., graham crackers, mixture and berries) leaving the final top layer of berries until just before serving. Refrigerate overnight.

Just before serving, decorate with a final layer of strawberries, raspberries and blueberries.
