One-Pot Creamy Mediterranean Chicken

This dish will transport you straight to the Mediterranean using fresh ingredients and herbs for a hearty pasta dish.

  • ¼ cup Crystal salted butter
  • 2 chicken breasts
  • 2 tablespoons garlic purée
  • Salt and pepper
  • 12 ounces roasted red peppers, diced
  • 8 ounces cavatappi pasta
  • 2 cups Crystal whole milk
  • 1½ cup chicken broth
  • ½ cup grated parmesan
  • 2 cups fresh baby spinach (or 1 cup frozen spinach)

  • Step 1

    In a large pot, melt butter over medium-high heat.
  • Step 2

    Smear chicken breasts with garlic purée. Salt and pepper generously.
  • Step 3

    Add chicken breasts to pot and brown on both sides in butter. Remove chicken from pan and dice, then return to pan.
  • Step 4

    Add red peppers, pasta, milk, chicken broth, and parmesan to the pot. Cover and cook for 12-14 minutes, or until pasta is al dente. 

  • Step 5

    Stir in spinach, and cook until warm.
