One-Pot Creamy Mediterranean Chicken

- ¼ cup Crystal salted butter
- 2 chicken breasts
- 2 tablespoons garlic purée
- Salt and pepper
- 12 ounces roasted red peppers, diced
- 8 ounces cavatappi pasta
- 2 cups Crystal whole milk
- 1½ cup chicken broth
- ½ cup grated parmesan
- 2 cups fresh baby spinach (or 1 cup frozen spinach)

Directions

Step 1
In a large pot, melt butter over medium-high heat. -
Step 2
Smear chicken breasts with garlic purée. Salt and pepper generously. -
Step 3
Add chicken breasts to pot and brown on both sides in butter. Remove chicken from pan and dice, then return to pan. -
Step 4
Add red peppers, pasta, milk, chicken broth, and parmesan to the pot. Cover and cook for 12-14 minutes, or until pasta is al dente.

Stir in spinach, and cook until warm.
