High-Protein Buffalo Chicken Stuffed Shells
Buffalo chicken stuffed shells are an easy dinner that the whole family will love! Loaded with blended cottage cheese, shredded chicken, spicy buffalo sauce, and green onions, these shells boast over 30 grams of protein per serving. Ingredients
- 24 jumbo pasta shells
- 16 ounces Crystal Small Curd Cottage Cheese
- 3 cups cooked shredded chicken
- ⅔ cup buffalo sauce, divided
- 3 tablespoons ranch seasoning
- 3 tablespoons minced fresh chives, divided
- 1 cup shredded Colby Jack cheese
- 2 tablespoons crumbled blue cheese, for garnish (optional)
- Ranch dressing, for drizzling (optional)

Step 1
Preheat the oven to 375°F. Grease a 9x13 baking dish and set aside for later.

Bring a pot of heavily salted water to a rolling boil. Boil the jumbo pasta shells 1 minute shy of al dente, according to the package directions. Drain well and place the shells on a sheet pan to prevent sticking.

Meanwhile, add the cottage cheese to a blender or food processor. Blend on high speed, scraping down the sides of the blender or food processor bowl every once in a while, until the cottage cheese is very smooth.

Spoon the cottage cheese into a large mixing bowl. Add the cooked shredded chicken, ½ cup of buffalo sauce, ranch seasoning, and 2 tablespoons of chives. Mix until the filling is smooth.

Using a large spoon, divide the filling evenly between the jumbo shells. Drizzle the remaining buffalo sauce on the bottom of the prepared 9x13 baking dish. Line the stuffed shells in the baking dish and sprinkle the tops with the shredded Colby Jack cheese.

Bake the shells for 25-30 minutes, until the filling is hot and the cheese is bubbly. Garnish with the remaining chives, blue cheese, and ranch dressing (if using).
