Ingredients

Cinnamon Swirl

  • 2 tablespoons unsalted butter, melted (30 grams)
  • 4 teaspoons brown sugar, packed
  • 4 teaspoons cinnamon

Pancake Batter (4 Bowls)

  • 2 cups quick-cooking oats (200 grams)
  • 2 teaspoons baking powder
  • ½ teaspoon kosher salt
  • 4 large eggs
  • 1⅓ cups Crystal low fat cottage cheese
  • ¼ cup granulated sugar (50 grams), maple syrup (60 milliliters), or sweetener of choice
  • 4 teaspoons pure vanilla extract
  • 1 cup Crystal ultra-filtered whole milk
  • Maple syrup, for serving

Products used

  • Ultra-Filtered Whole Milk

  • Unsalted Butter

  • Low Fat Cottage Cheese

Directions

  • Step 1

Preheat the oven to 350°F. Grease 4 large ramekins or oven-safe glass containers with cooking spray or neutral oil.

  • Step 2

Combine the melted butter, brown sugar, and cinnamon in a small bowl. Let it cool slightly while you make the pancake batter.

  • Step 3

Then, add the oats, baking powder, Kosher salt, eggs, cottage cheese, coconut sugar, vanilla extract, and milk to a blender. Blend on high speed until smooth, about 30 seconds. Divide the remaining pancake batter equally between the 4 prepared ramekins or containers.

  • Step 4

Transfer the cinnamon swirl mixture to a piping bag or zipper bag with the tip cut off. Pipe swirls over each bowl of pancake batter. (Alternatively, you can drizzle the mixture over the pancake batter.)

  • Step 5

Bake the pancake bowls for 28-32 minutes, until an inserted toothpick comes out clean. Let the pancake bowls cool for 5 minutes, and serve with maple syrup or powdered sugar glaze.

Note: To make powdered sugar glaze, combine 2 tablespoons (15 grams) of powdered sugar with 1 teaspoon of ultra-filtered milk. Whisk until smooth, and add more milk, ¼ teaspoon at a time, until you reach your desired consistency.
