1/2 C confectioners sugar
1 1/2 C flour
1/2 tsp salt
3/4 C Crystal butter cut into small pieces
4 Crystal eggs
1 1/2 C granulated sugar zest of 1 lemon
1/2 C fresh lemon juice
3/4 C Crystal whipping cream
Preheat oven to 325. Grease a 13×9 inch pan.
Sift confectioners sugar, flour and salt into a bowl. With a pastry blender cut in the butter until mixture resembles coarse crumbs.
Press the mixture into the bottom of the prepared pan. Bake until golden brown, about 20 min.
Meanwhile whisk the eggs and sugar together until blended. Add the lemon rind and juice and mix well.
Lightly whip cream and fold it into the egg mixture gently. Pour over the still warm crust, return to the oven and bake until set, about 40 minutes.
Cool completely before cutting into bars. Dust with confectioners sugar.
