Ingredients

Base

  • ½ cup confectioners' sugar
  • 1½ cup flour
  • ½ teaspoon salt
  • ¾ cup Crystal butter cut into small pieces

Filling

  • 4 eggs
  • 1½ cups granulated sugar
  • Zest of 1 lemon
  • ½ cup fresh lemon juice
  • ¾ cup Crystal whipping cream

Directions

  • Step 1

    Preheat oven to 325 °F. Grease a 13×9 inch pan.
  • Step 2

    Sift confectioners sugar, flour, and salt into a bowl. With a pastry blender, cut in the butter until the mixture resembles coarse crumbs.
  • Step 3

    Press the mixture into the bottom of the prepared pan. Bake until golden brown, about 20 minutes.
  • Step 4

    Meanwhile, whisk the eggs and sugar together until blended. Add the lemon rind and juice and mix well.
  • Step 5

    Lightly whip the cream and fold it into the egg mixture gently. Pour over the still warm crust, return to the oven, and bake until set, about 40 minutes.
  • Step 6

    Cool completely before cutting into bars. Dust with confectioners sugar.
